The next country on our Cooking the Atlas journey is officially on the calendar: Dinner, July 4, Algeria Casual Dress
Initially, I bought a tagine for Algeria, planning to make a chicken tagine. However, while trying to find the perfect authentic-looking recipe, I realized there is quite an internet debate on that subject. It would seem some feel very strongly that tagine (tadjine) is Algerian, while others feel just as strongly that it is Moroccan. Since I have no authority whatsoever to settle that debate, I’ve decided to put my new tagine pot on the back burner and go with this menu instead:

All recipes are from The Teal Tadjine (https://thetealtadjine.blogspot.com), which quickly became one of my favorite recipe sites for this project.
At first glance, this menu seems fairly straightforward, though I will have to do a bit of research and digging to find the berkoukes. While the rules of this game probably require that I hand-roll them, I quite simply do not possess that kind of patience.
Aside from that, the lamb lollipops have already been ordered from the local lamb farm, and I just need to find some harissa. Everything else should be easy-peasy. (Ha! Here’s to hoping, anyway.)
